What makes it so good is all that you’re thinking about is how great it tastes, and the grease is running down your chin, the taste of the onions, and it’s all good. If you stop to think about it or you’re taking pictures, that’s sort of like keeping a diary while you’re having sex.

I love Anthony Bourdain. However, his book Kitchen Confidential convinced me that the glamorous TV chefs are nothing like real-life line cooks. It’s a great read.
